The Hāngi is a tradition special to Māori, hāngi is the cornerstone of any big gathering and a favourite dish amongst locals. Cooked for four hours in a hāngi pit (a traditional ground oven), the kai (food) is covered in wet cloth and earth to create tender, slow cooked meat and succulent vegetables all infused with a smoky, earthy fragrance.
